Carrot Fluff!!!

By popular demand, online here is the Carrot Fluff recipe from the Solstice gathering last weekend!

Carrot Fluff

-2 lbs carrots
-1/2 cup softened butter or margarine
-1/4 cup sugar
-1/4 cup coconut flour
-1 tsp baking powder
-1 tsp vanilla
-3 eggs, beaten
-pinch salt

Peel and chop carrots.  Boil 15 minutes.  Drain and mash.  Add margarine and let melt in.  Add all other ingredients and incorporate well.  Can even whir up some more in food processor.   Bake 30 minutes in 350 oven.
