Recipe: Granola!

Here is a simple granola recipe that you may enjoy! It’s been tested and is known to taste very good!!! It is nut-free, though they can be added, and the recipe can be adjusted to accommodate nearly any dietary restrictions.

Ingredients:

3/4 – 1 cup Oil (any neutral oil: Sunflower, Safflower, Canola, etc…)

1/2 – 1 cup Honey or Agave Nectar
1-2 tbsp. Vanilla Extract
1 tsp. Salt
1 cup Flaxseed Meal
1 cup Shredded Coconut (optional)

2 cups Oats
1/2 – 1 Cup Sunflower Seeds

Preheat oven to 350

Mix the oil, honey/agave, vanilla and salt in a large bowl. (Honey is stickier than agave, so the granola will clump more).
Add the flaxseed meal and shredded coconut, and mix well.
Now add the oats and sunflower seeds. If you like, you can add nuts at this point, too. Don’t overmix, but make sure that everything is well coated and distributed. (If you add more stuff, add more oil.)

Transfer to a cookie sheet or baking dish.
Bake at 350 for 25 minutes. After the first 15 minutes, take it out and stir it well, then return it to the over for the last 10 minutes of the bake.

Let cool. Store, covered.

When it is cool you can add dried fruit or whatever else you like. Enjoy!!!
